Trulli
Stone huts with conical roofs of dry stacked limestone slabs. Alberobello has the biggest cluster (UNESCO, over 1,000 in the Rione Monti quarter alone), but you meet lone trulli among the vineyards all across the Valle d'Itria.
Pumo
A ceramic acanthus bud, symbol of prosperity and a charm against bad luck. It traditionally tops balcony railings and is now the region's most common souvenir; despite appearances it is a bud, not a pine cone.
Luminarie
Gates and whole cathedrals of light built from thousands of bulbs for patron saint festivals. The 17th century tradition peaks in early July in Scorrano, where the lights come on in sync with music.
Ceramic prickly pears from Grottaglie
Grottaglie near Taranto has a whole ceramics quarter with workshops and kilns carved into the rock. Besides traditional wine and oil jars, the potters now turn out the colourful ceramic prickly pears you see on walls across the region.
Orecchiette drying in the street
In Bari Vecchia's Arco Basso alley, women hand shape the little pasta ears daily and dry them on racks right outside their doors. The craft passes from mother to daughter.
Centuries old olive trees
Gnarled trees hundreds of years old, mightiest on the plain between Ostuni and Monopoli. Since 2013 the Xylella bacterium has been killing groves in the south, so between Gallipoli and Lecce you also pass grey, dead orchards.
White towns
Historic centres painted with lime: hilltop Ostuni above the olive plain, Locorotondo, Cisternino, Martina Franca. Lime once disinfected and reflected the sun; what remains is a maze of white lanes with colourful doors.

Panzerotto
A fried pocket of pizza dough stuffed with tomato and mozzarella, Bari street food for 3 to 5 €. Eaten hot from the paper, and it loves to squirt.
Orecchiette con cime di rapa
Pasta ears with turnip tops, anchovies and garlic, the signature dish of Bari and the whole region. Around 10 € in a trattoria.
Burrata
A pouch of stretched mozzarella filled with creamy stracciatella, invented in Andria and now IGP protected. Eat it fresh, with nothing but oil and bread.
Bombette
Pork neck rolls stuffed with cheese, grilled over coals right in the butcher shops of the Valle d'Itria; Martina Franca and Cisternino both claim the original. Sold by weight, a portion runs about 10 €.
Focaccia barese
A round, moist focaccia with cherry tomatoes and olives, often with potato in the dough. A quarter from a Bari bakery costs 2 to 3 €.
Primitivo and Negroamaro
The two main red grapes: full bodied Primitivo di Manduria and Salento's Negroamaro, which also makes excellent rosé. A glass runs 4 to 6 €, with taralli crackers everywhere alongside.

A valley of trulli, vineyards and white towns, each 10 to 15 minutes from the next. The streets are free to wander, you only pay for parking; end the day with bombette straight from a butcher's grill.
Matera

The Sassi cave city just across the border in Basilicata, UNESCO listed and a No Time to Die film set. Wandering is free, the Casa Grotta cave dwelling charges 8 €; park above the centre, cars can't enter the Sassi.
Polignano a Mare and Ostuni
~30 Min. mit dem Auto
Polignano sits on a cliff above the pebbly Lama Monachile cove, Ostuni is the white town on a hill looking over olive groves to the sea. Both sit just off the coast road, about 50 minutes apart.
Strände und Meer
800 km of coast on two seas. The Adriatic side is low rock with pebbly coves (Polignano, Monopoli); Salento's Ionian side means long white beaches with shallow turquoise water: Punta Prosciutto, Torre Lapillo, Pescoluse. Free stretches must exist by law alongside the paid lidos, but in August they fill right after breakfast. A two sunbed set with parasol runs 20 to 40 € in season, over 50 € in Salento hotspots. The sea peaks at 26 to 28 °C from mid July to late August and stays swimmable through September.
Wie hinkommen
Fly to Bari or Brindisi, both with low cost routes. Driving is 1,250 km from Prague, doable in one long day. On the way back you can add a ferry to Greece or Croatia from Bari or Brindisi.

Gut zu wissen
- Historic centres (Bari, Lecce, Ostuni, Polignano, Alberobello) are camera enforced ZTL zones. Fines reach rental cars too; park outside the walls and walk.
- Blue lines mean paid parking (1 to 1.50 € per hour), white is free (often residents only, read the signs), yellow means no parking.
- Smaller shops and sights close from about 1 pm to 5 pm. Dinner starts around 7:30 pm; kitchens tend to be shut before that.
- The 1.50 to 3 € per person coperto is a legal cover charge for seat and bread and must be listed in the menu. Tipping is not expected.
- The only toll road is the A14 along the north; the coastal SS16 and all of Salento are toll free. Expect summer queues near the sea, though.
- Tap water from the Apulian aqueduct is drinkable, though restaurants default to bottled.
- The week around Ferragosto (15 August) is peak of the peak: beaches full from morning, pricier lidos, queues on the SS16. Late June and September offer the best calm to sea ratio.
